| Cold Avocado Cucumber Soup |

Ingredients:

2 ripe avocados, peeled and cubed |
| |
1 cucumber, peeled, seeded and cubed |
| |
3/4 cup low-fat soy milk |
| |
2 tablespoons cilantro |
| |
2 green onions, chopped |
| |
2 cups vegetable broth |
| |
pepper and salt to taste |
| |
1 tablespoon lemon juice |
|
| |
Directions:
In a blender or food processor blend the first 5 ingredients, until smooth.
Add the lemon juice, salt and pepper and as much vegetable broth as you want to make the desired consistency. Chill.
